Ingredients

2 large eggs (approximately 136g)
136g baking spread, softened
136g self-raising flour
136g caster sugar
1 tsp vanilla essence (or a generous splash)

Instructions

1. Preheat the oven to 160°C (fan). Line a 12-hole muffin tin with cupcake cases.
2. Place the eggs, baking spread, self-raising flour, caster sugar, and vanilla essence into a large mixing bowl.
3. Beat together until the mixture is smooth, light, and well combined. Avoid overmixing.
4. Divide the mixture evenly between the cupcake cases, filling each about two-thirds full.
5. Bake for 18–22 minutes, or until the cupcakes are golden and a skewer inserted into the centre comes out clean.
6. Leave the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely, before decorating or serving.

Notes

– Ensure the baking spread is at room temperature for the best texture.

– Once cooled, decorate with your favourite buttercream, icing, or simply dust with icing sugar.

– Store in an airtight container for up to 3 days.
