There’s something special about a classic vanilla cupcake. Whether you’re baking for a birthday, an afternoon treat with a cuppa, or simply because you fancy something sweet, you can never go wrong with this timeless favourite.
This delicious recipe has been kindly shared by Christine’s Cakery, proving that the simplest bakes are often the most loved. Light, fluffy and full of classic vanilla flavour, these easy cupcakes are perfect for bakers of all abilities and are guaranteed to be a hit with family and friends.

2 large eggs (approximately 136g)
136g baking spread, softened
136g self-raising flour
136g caster sugar
1 tsp vanilla essence (or a generous splash)
1. Preheat the oven to 160°C (fan). Line a 12-hole muffin tin with cupcake cases.
2. Place the eggs, baking spread, self-raising flour, caster sugar, and vanilla essence into a large mixing bowl.
3. Beat together until the mixture is smooth, light, and well combined. Avoid overmixing.
4. Divide the mixture evenly between the cupcake cases, filling each about two-thirds full.
5. Bake for 18–22 minutes, or until the cupcakes are golden and a skewer inserted into the centre comes out clean.
6. Leave the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely, before decorating or serving.
– Ensure the baking spread is at room temperature for the best texture.
– Once cooled, decorate with your favourite buttercream, icing, or simply dust with icing sugar.
– Store in an airtight container for up to 3 days.
